{"id":5223,"date":"2019-12-15T21:06:31","date_gmt":"2019-12-15T21:06:31","guid":{"rendered":"https:\/\/labonacarn.com\/?p=5223"},"modified":"2022-03-07T08:48:35","modified_gmt":"2022-03-07T08:48:35","slug":"nuestro-mejor-pollo-de-corral","status":"publish","type":"post","link":"https:\/\/labonacarn.com\/es\/nuestro-mejor-pollo-de-corral\/","title":{"rendered":"Nuestro mejor pollo de corral"},"content":{"rendered":"<p>Ingredientes para 6 personas: 1 Pollo de corral de unos 3 kilos. 3 cebollas grandes de Figueres 6 cebollitas peque\u00f1as 10-12 ciruelas 1 cabeza de ajos 1 vaso peque\u00f1o de brandy 1 vaso peque\u00f1o de vino rancio 2 hojas de laurel 1 rama de romero y tomillo 2 tomates peque\u00f1os bien maduros 1 rama de canela 1 vaso de caldo de carne.<\/p>\n<p>Para la picada: 6 dientes de ajos 3 rebanadas de pan frito 5 o 6 avellanas 6-8 pi\u00f1ones perejil<\/p>\n<p>Procedimiento:<\/p>\n<p>Para empezar, salpimentamos el pollo, previamente cortado en octavos (o sea cada cuarto se cortan en dos), y lo fre\u00edmos en una cazuela de barro, con un poco de manteca y aceite. Debe quedar bien dorado. Mientras ponemos en un bol las ciruelas con brandy y las dejamos unos 15 minutos. Cuando est\u00e9 el pollo dorado, a\u00f1adimos a la cazuela las cebollas de Figueres trituradas, la cabeza de ajos enteros, los dos tomates, la canela y dejamos cocer durante unos 30 minutos a fuego lento y con la cazuela sin tapar y se debe ir caramelizando. Pasados \u200b\u200beste 30 minutos, a\u00f1adimos a la cazuela las cebollitas enteras, el vino rancio, el brandy que ten\u00edamos macerando las ciruelas, las ramas de tomillo, laurel y romero. A\u00f1adimos el vaso de caldo de carne y dejamos hacer hervor durante 40 minutos m\u00e1s a fuego bajo, con la cazuela tapada. A\u00f1adimos la picada que haremos triturando en un mortero, los dientes de ajo, el perejil, el pan frito y los frutos secos, lo mezclamos y lo a\u00f1adimos a la cazuela del pollo.<\/p>\n<p>Debemos tener en cuenta que la picadura debe ligar un poco la salsa del pollo. Ponemos las ciruelas, los pi\u00f1ones y dejamos cocer durante 15 minutos m\u00e1s. Y ya para terminar, servimos el pollo con las ciruelas, unas cebollitas y con un poco del jugo del asado.<\/p>\n<p>Recuerde que &#8230; El asado de pollo es mucho m\u00e1s bueno, si lo hacemos el d\u00eda antes. Y al d\u00eda siguiente la basura unos minutos de hervor y comer. Recuerde que el asado es un plato de fuego lento, con paciencia.
