{"id":5213,"date":"2021-09-18T22:01:24","date_gmt":"2021-09-18T22:01:24","guid":{"rendered":"https:\/\/labonacarn.com\/?p=5213"},"modified":"2022-03-07T08:31:38","modified_gmt":"2022-03-07T08:31:38","slug":"una-butifarra-de-bandera","status":"publish","type":"post","link":"https:\/\/labonacarn.com\/es\/una-butifarra-de-bandera\/","title":{"rendered":"Una butifarra de bandera"},"content":{"rendered":"<p><strong>Una butifarra de bandera<\/strong><\/p>\n<p>La butifarra es una de las carnes m\u00e1s consumidas y conocidas en Catalu\u00f1a.<br \/>\nEs toda una tradici\u00f3n comer en cualquier barbacoa o en un mont\u00f3n de situaciones donde ella es la reina.<br \/>\nLa podemos cocer a la brasa, a la plancha, al horno, en guisos, a la cazuela o tambi\u00e9n en calderas.<\/p>\n<p>En la cocina catalana se hacen un mont\u00f3n de diferentes tipos de botifarra y m\u00e1s concretamente, a labonacarn ten\u00e9is alrededor de 20 butifarras diferentes a tu disposici\u00f3n.<br \/>\nComo butifarras excelentes te proponemos que las pruebes todas, pero si deseas hacer una degustaci\u00f3n m\u00e1s rigurosa, la butifarra cruda o del perol o la negra son espectaculares.<br \/>\nSi te gustan las setas, la de cepas y n\u00edscalos son otra birguer\u00eda.<\/p>\n<p><strong>Nuestra butifarra<\/strong><\/p>\n<p>Lo que hace que una butifarra sea excelente son dos cosas: la materia prima y en segundo lugar su elaboraci\u00f3n.<\/p>\n<p>En nuestro caso la materia prima es un cerdo elegido en la comarca de la Selva, cerca de Angl\u00e9s. Hablamos de animales que viven bien alimentados, sin ning\u00fan tratamiento de antibi\u00f3ticos, ni ning\u00fan tipo de hormonas, y alimentados con forrajes y harinas naturales.<br \/>\nSu elaboraci\u00f3n, hecha a mano, cada d\u00eda, seleccionando las mejores carnes magras para conseguir, junto con la sal y pimienta y la tripa natural, una butifarra de alta calidad.<br \/>\nComo ya sabes, en nuestro trabajo no ponemos conservantes ni colorantes y por lo tanto estamos hablando de un producto fresqu\u00edsimo que reci\u00e9n hecho, lo ten\u00e9is en casa al cabo de unas horas. Esto no lo hace nadie.<\/p>\n<p>Si la quieres comparar, coge cualquier butifarra y ponla al lado de la nuestra. F\u00edjate simplemente con el color. La nuestra tiene un bajo contenido en grasa, para que me entiendas, tiene pocas manchas blancas. Si coges las etiquetas de las dos, a labonacarn ver\u00e1s que simplemente es carne de cerdo, sal y pimienta.
