El procedimiento es el siguiente: tomamos un muslo de cerdo y le quitamos la piel gruesa. Una vez la tenemos limpia le cortamos la parte del muslo del hueso, dejando un trocito de hueso y bastante.<\/p>\n<p>Entonces hacemos el procedimiento de poner esa carne a macerar con una sustancia que contiene agua, sal y az\u00facar. En funci\u00f3n de esta mezcla se obtiene la calidad del producto. En esta sustancia labonacarne no pone ning\u00fan otro a\u00f1adido.<\/p>\n<p>Muchas empresas en este proceso ponen fosfatos, potenciadores de gusto, estabilizantes, contaminando el producto. Estos fosfatos son elementos qu\u00edmicos que retienen mucho el agua y por tanto, hacen que el jam\u00f3n dulce final pese mucho m\u00e1s pero simplemente es porque contiene m\u00e1s agua.<\/p>\n<p>Nuestra filosof\u00eda es hacerles los productos totalmente naturales y por eso en labonacarne no ponemos ning\u00fan fosfato ni ning\u00fan elemento contaminante.<\/p>\n<p>Una vez tenemos el jam\u00f3n macerado, entonces se realiza un proceso de cocci\u00f3n entre 60 y 80 grados y se deja reposar. Al cabo de un d\u00eda se acaba el proceso envasando este jam\u00f3n y listo para poderlo cortar y consumir.<\/p>\n<p>En nuestro caso, seleccionamos nuestro mejor cerdo y lo llevamos a realizar este proceso a empresas especializadas. El resultado es un jam\u00f3n dulce, sin ning\u00fan a\u00f1adido qu\u00edmico, muy natural, de f\u00e1cil digesti\u00f3n y la verdad, muy bueno de gusto!!!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>El jam\u00f3n dulce proviene del muslo del cerdo.
