Se trata de una carne calificada como carne roja pero que no lo es tanto. Nos contaremos. Se trata de una carne, a diferencia de la carne de vacuno o de cordero, con un contenido m\u00e1s bajo en colesterol y grasas, es m\u00e1s magra. Su contenido en calor\u00edas es menor que la ternera o el mismo pollo.<\/p>\n<p>A la hora de la cocci\u00f3n requiere m\u00e1s atenci\u00f3n. Es una carne muy tierna y por tanto, para no perder esa ternura, debemos cocinarla poco a poco. Una r\u00e1pida cocci\u00f3n nos quedar\u00e1 m\u00e1s seca.<\/p>\n<p>Sobre la forma de cocinarla hay muchas. Desde la brasa, como enlucida, guisada, al horno, etc, etc. Le ponemos unos ejemplos de platos que hemos encontrado:<\/p>\n<ul>\n<li>cabrito: al estilo mediterr\u00e1neo, a la brasa, a la losa, al horno, al horno con aroma de ajos tiernos, con derrame de mojama, con ajo, enlucido, asado.<\/li>\n<li>carr\u00e9 de cabrito: a la brasa, al horno con hierbas provenzales, al horno, lechales y habitas con jam\u00f3n ib\u00e9rico.<\/li>\n<li>costillas de cabrito: a la brasa, la parrilla, a la losa, a la milanesa, a la plancha, con ajos tiernos, con alcachofas, enlucidas.<\/li>\n<li>costillas y medias de cabrito a la brasa.<\/li>\n<li>costillas de cabrito: con ajo, enlucidas con guarnici\u00f3n.<\/li>\n<li>muslo de cabrito: a la brasa, a la segoviana, al horno, al horno con ciruelas y pi\u00f1ones, rellena de foie gras y manzana, virutas de hombro de cabrito con verduritas sobre coulis de boniato.<\/li>\n<li>hombro de cabrito: a la brasa, a la segoviana, al horno, al horno al estilo del norte, al horno con ciruelas y pi\u00f1ones, al horno con verduritas, con pur\u00e9 de patatas, cebolla crujiente y crostonets de pan tostado, asada .<\/li>\n<li>hombro y muslo de cabrito: confitadas con salsif\u00edes y patatas.<\/li>\n<\/ul>\n<p>La carne de cabrito es m\u00e1s tierna que la de cordero dado a que son animales que tienen entre 2 y 4 meses, mientras que el cordero tiene m\u00e1s.
